Jammy Jam Strikes Again

In addition to all of your wonderful suggestions for failed jam, I came up with another. The credit for this goes all to the power of google. What did we do without the internet?

These amazing things are called Russian Jam Squares. This picture is from batch one, last week. I just finished batch two and they are cooling, waiting for me to eat them.They are delicious and simple. Just follow the steps below!

Cream 1 cup butter and 1 cup sugar until frothy.
Add 2 egg yolks.
Gradually add 2 cups flour.
Add 1 cup chopped walnuts.
Spoon half the batter into greased 8x8x2 pan.
Pat down into crust.
Top with 3/4 cup jam (I used my failed strawberry jam and I added enough to cover the whole layer, a little more than 3/4 cup).
Cover with the remaining batter.
Bake at 325 degrees for 60 minutes.
Cut when cool. (this is important!)

Yummy! That looks so good. I will have to give that a try. My one small batch turned out okay, but I will try this anyway.
