Canning Peaches

So we have a very neglected peach tree in our yard. And when we got back from Priest Lake all of the peaches were getting ripe. Like falling off ripe. Little problem, we couldn't get to the peaches because there were too many blackberry bushes. So that same day we got back, we did a little bit of yard work. It looked like this:

It looked like this at the end. Not beautiful, but much better. At least enough that we could get to the tree.

After we regained some of our energy and motivation, we decided to try canning. For the first time ever. These are all of our peaches. They weren't really in the best condition, some were too ripe and some weren't quite ripe enough. They taste great, but the canning doesn't look so hot. But here are some pictures of our first peach harvest, pre-canning.
A week later, after we went down for Josh's memorial run, my mom kindly gave us some peaches and nectarines and we tried canning again. This time it went much smoother. Here are some pictures from that process.
I think we are finally starting to get it down. Maybe next year we will branch out and try some veggies. All of that work with peaches was in less than 10 days. Needless to say I was a little sick of peaches. We have also been freezing peaches, blackberries, and blueberries and we just tried drying apple chips. Big steps for us!

P.S. And yes, I just started teaching. The kids are great, the school is great, it is all going wonderfully. But I'm busy, so if I don't stay caught up, don't be surprised.

Those peaches look delicious! Reminds me of when my mom used to bottle them. Too bad I'm too lazy to do anything like that... in fact, I'm not even sure how to bottle things :) You guys must eat a lot of really good fruit.
