I'm giving myself a pat on the back for making dinner, because I really haven't felt like cooking lately. This picture does not do this meal justice, believe me it's delicious. We call it curry because it has coconut milk and curry powder....but do you know what makes a curry a curry? There's no recipe because I make it up every time.

But tonight I:
  • Started brown rice in the rice cooker
  • Chopped an onion, 3 cloves garlic, and 4 red potatoes up and put them in a pot
  • Dumped a can of coconut milk in and started it all bubbling
  • Grabbed a handful of carrot sticks, chopped them up, and added them to the mix
  • Opened a can of diced pineapple and dumped the juice in the pot
  • Grabbed a handful of celery sticks and a red pepper, chopped them up, and, when the potatoes were almost done, added them to the mix
  • Added the diced pineapple
  • Added curry powder to taste, we buy madras curry. I don't really know what the different kinds are.
Then we ate it. We were full and pleased. Now I also have lunches made for the next few days. Even more pleased.

Good job! I always am proud of myself when I make dinner and don't feel like it. It's not that I don't like to cook, it's just that sometimes it get monotonous.

I love your 'randomness' :)
