Potato Pancakes

Andrew has found us another favorite breakfast food, potato pancakes! We've had them a few times now and we like them well enough that it is time to share the recipe. They are way better than original pancakes, not near as heavy. One batch makes enough for Andrew and I, double it for every two extra people.  For this batch, we used fresh fingerling potatoes that we picked from Half Acre Farm.
Potato pancakes with strawberry rhubarb freezer jam


Potato Pancakes
3 medium potatoes, peeled
2 tablespoons flour
2 eggs
1/4 cup soy milk
1 tsp baking powder
salt
1/4 cup applesauce

Blend all ingredients in the blender.  Put on greased hot pancake grill until golden brown and done.  They take longer to grill than regular pancakes.  Smoother them in fresh jam and syrup.
