Mediterranean Minestrone Casserole

This is another one of those super easy and delicious recipes that you can throw in the crockpot the night before, start cooking in the morning, and eat dinner soon after you get home. I loved it so much that I ate it for lunch for days after!

Mediterranean Minestrone Casserole
4 carrots chopped
1 onion chopped
1 cup water
2 teaspoons sugar
1 teaspoon Italian Seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
1 can diced tomatoes, undrained
1 can garbanzo beans, drained
1 can (6 oz) tomato paste
2 cloves garlic, minced
1 1/2 cup cut green beans
1 cup uncooked elbow macaroni
1/2 cup Parmesan cheese

Mix all ingredients except green beans, macaroni, and Parmesan cheese in a 4 quart slow cooker. Cover and cook on low for 6 hours. Stir in green beans and macaroni, increase heat to high. Cook for an additional 20 minutes or until beans and macaroni are tender. Sprinkle with cheese.

Congrats (belatedly) on the baby! We are very excited for you! I didn't find out until last week when I told Grandma Bybee I was pregnant, too. The best baby gifts: diapers. You've probably looked into it, but my friend really loves g-diapers (a good blend of reusable and disposable). Also, my friend tried hypnobirthing and really liked it as an alternative to an epidural (although I personally am in love with epidurals;) ).
