Coffee Cake

"Special Breakfast" has become pretty regular around here now that Andrew and I are both home every morning without anywhere to be quickly. And with me having a HUGE appetite now that I'm nursing. We recently tried a favorite from Andrew's family, Coffee Cake. Delicious, especially with tasty coffee and farm fresh eggs from our neighbor!

Cake
1 1/2 cup flour
3/4 cup sugar
2 1/2 tsp baking powder
3/4 tsp salt
1/4 cup oil
3/4 cup milk
1 egg

Topping
1/3 cup brown sugar
1/4 cup flowr
1/2 t cinnamon
3 T firm butter


  • Blend ingredients for cake and put in greased cake pan. 
  • Combine topping ingredients (double if you like sweet stuff), and use a pastry cutter to blend into a crumble.
  • Evenly spread over top of cake batter.
  • Bake for 25-30 minutes at 350 degrees.  Use the ol’ toothpick method to check for doneness.
